beingharvestedwere 9-10weeks old, and as soon as a
bay is harvested the ground is prepared for the next crop,
which is plantedbymachine inoneday.
Irrigation is done from the topof the house, and the
company reckons there is not yet a good system todo
this fromground level.
At the endof each season, the ground is steam sterilised
for 5-6hours at 60degreesC to adepthof 45cm. The
process then starts all over again.
The largest heads arepickedmanually. The rest areall harvestedbymachine threedays later.
